Pear & Almond Danish - Danish dough topped with sliced local pears, a fresh made frangipane (almond & pastry cream filling) and sugar.
Pumpkin Sage Savory - A savory danish topped a roasted pumpkin béchamel, sage and onion filling with parmesan cheese.
Kommissbrot (Saturday Only)- A traditional German Pan loaf with a softer, yet firm crust, baked in a loaf pan and meant to have a nice shelf life. Modestly whole-grain at 66%, the flavor has warming-tones to it, slightly sour, and has serves the best use for open faced toast, sandwiches or paired with richer soups. If you have been shopping with us for a long while, eight years ago at our retail shop this was called 'German Rye' when I made it daily.

Breads (Everyday): Baguette - Traditional French baguette with a 30 hour fermentation, and a combination of natural leaven & baker’s yeast. Italian - Crisp, thin crust, long fermented but with the use of a touch of yeast and natural leaven. 5 Grain & Seed - A blend of bakery milled organic wheat, rye, oats, flax & sunflower seeds, whole grain and long fermented. Country Sourdough - Our French style sourdough with a long fermentation and a thick, crispy crust using bakery milled organic wheat & rye. Cheddar Sourdough -Our country sourdough with the addition of aged Wisconsin White Cheddar. Miche - Modeled after the French countryside sourdough loaves, we make a large four pound boule using fresh bakery milled spring & winter wheat along with rye for a sensational whole-grain flavor. Pretzels - German style, dipped in lye with coarse sea salt.
Special Bread Bakes: Wednesday: 3-Seed - Sourdough loaf using sunflower, flax and sesame seeds. Thursday: Regional Grain Loaf - Naturally leavened overnight using organic grains, milled at the bakery and grown within 3-4 hours from the shop. A high-hydration table bread with many uses but putting to good use regenerative growing practices, organic farming, and honest ingredients. Friday: Sourdough Caraway Rye - Deli Rye with 40% organic fresh milled rye flour, and caraway seeds. Saturday: Cherry-Pecan Sourdough - Our sourdough jam packed with Cherries & Pecans.

Beverages: We have always offered Ferris Organic and/or Fair Trade Coffee now complemented with local, Calder Dairy if desired: Ferris French Roast - A robust dark roast with low acidity, & high roasted flavor notes. Ferris Brazilian (Light) - Fair-trade, single sourced with a creamy, nutty, smooth flavor, less fruity, slightly more acidic and easy to drink. Cold Brew - Smooth, full flavored and low acidity thanks to a long, slow, cold steep. A delightful, strong coffee drink.
Organic Teas from Frontier Organics: Lemon Ginger - An herbal tea with lemon zest & lemon grass, bits of citrus peel and a pinch of coriander. Darjeeling - A black tea with a unique smell and flavor, almost citrus like and full bodied. Gunpowder Green - High caffeine green tea, full flavor, robust and slightly smoky. Turmeric Ginger- A blend of organic turmeric and ginger for a almost spicy drink, great for stomach, muscles or enjoying with a pastry Darjeeling Ice Tea - Darjeeling but steeped overnight and served with Ice for a hot day!
