What we are all about...

I get asked a lot about this, but my morning starts at midnight when my alarm goes off for work. Why?

All of our naturally leavened breads and croissants are nearly a three day process from start to finish. There are no shortcuts, pre-made mixes, boxes of frozen products. It starts with milling organic, locally grown grains, creating pre-ferments for digestibility & flavor, and focusing on traditional methods discarded by a fast paced society.

 We emphasis the value of fermentation, natural leavening and the hand-made skill of traditional baking to optimize flavor, nutrition and sustainability.

Stollen is back! (Everyday) - Our traditional German Stollen we've been featuring since we opened in 2016. A rich cake meant to be shared over festive dinners or with tea and coffee in the morning, perhaps a nice wine at night. Featuring a high butter, sugar and egg content, lots and lots of rum soaked fruit, vanilla bean, citrus zest & juice, and rolled in butter and sugar after being baked. More cake than bread, and no, it's not 'just fruitcake'. Stollen is a long lived tradition dating back to the 1400's we are proud to continue to make it every year through November and December. Breads (Everyday):
Baguette - Traditional French baguette with a 30 hour fermentation, 
Italian - Crisp, thin crust, long fermented but with the use of a touch of yeast, .
Multigrain - A blend of bakery milled organic, wheat, rye and oats & sunflower seeds.
Country Sourdough - Our French style sourdough with a long fermentation and a thick, crispy crust.
Cheddar Sourdough -Our country sourdough with the addition of White Cheddar.
Vanilla & Cherry Sourdough - Our country sourdough with cherries soaked in vanilla.
Miche - Modeled after the French country sourdough loaves, we make a large four pound boule using fresh bakery milled wheat and rye flour for a sensational whole-grain flavor.
Pretzels - German style, dipped in lye with coarse sea salt.


Special Bread Bakes:
Wednesday: 3-Seed - Sourdough loaf using sunflower, flax and sesame seeds.
Thursday:
Old World Rye - A blend of bakery milled wheat, rye and ground caraway. Naturally leavened and crusty!
Friday: Sourdough Caraway Rye - Deli Rye with 40% organic fresh milled rye flour, and caraway seeds.
Challah - A beautiful braided loaf using pasture raised eggs, local honey, and locally sourced sunflower oil.
Saturday: Cranberry-Pecan Sourdough - Our sourdough jam packed with Cranberries & Pecans.

As a small husband & wife operation making items from scratch with limited quantities, baked fresh each morning for that day only, we can sell out of popular items and recommend calling ahead if you are looking for something particular.

All baked goods have and will continued to be made using a renewable 
energy program with purposeful ingredients and intent. Soon we will be using solar from our roof to bake your breads! A better tomorrow, one loaf at a time.
