Focaccia (Saturday only): A traditional flatbread featuring organic durum wheat milled here at the shop, basil (in the dough), sea salt, and a long fermentation. Each focaccia is sold by the 1/4 (about 3-4 servings) and great for dipping, sandwiches, cutting in half and topping like pizza, or general consumption while cooking dinner and you ask yourself, "Did I just eat that much bread?"
Mushroom Danish: Foraging? If you aren't, you should be. Mushrooms are springing up once again "Hello Morels", and I can't help myself when customers tell me their bountiful finds in the woods. A danish featuring a blend of Michigan oyster, trumpets and possibly a morel or two or three.
Rhubarb Danish: Fresh grown rhubarb, sliced and placed on a French pastry cream with streusel and sugar. A delightful, simple, seasonal treat that needs no other adornment.

Italian - Crisp, thin crust, long fermented but with the use of a touch of yeast and natural leaven.
Multigrain - A blend of bakery milled organic wheat, rye, oats & sunflower seeds, whole grain and long fermented.
Country Sourdough - Our French style sourdough with a long fermentation and a thick, crispy crust using bakery milled organic wheat & rye.
Cheddar Sourdough -Our country sourdough with the addition of aged Wisconsin White Cheddar.
Miche - Modeled after the French countryside sourdough loaves, we make a large four pound boule using fresh bakery milled spring & winter wheat along with rye for a sensational whole-grain flavor.
Pretzels - German style, dipped in lye with coarse sea salt.
